Gingerbread has a long tradition in the Czech lands. It was made on
various holidays, including Christmas. The recipe differs from region to
region, but the dough is always made with honey and spices. Originally,
the tough dough was pressed into wooden moulds, knocked out and baked.
Later, the wooden moulds were replaced with tin forms to cut shapes from a
thin layer of dough. Gingerbread figures were usually decorated with
icing. Over the time, people started using gingerbread figures s as
Christmas tree decorations.
