Christmas Carp

People used to eat fish on fasting days, including December 24. For Christians, fish symbolises Jesus Christ. Carp has become a traditional course for the Christmas dinner (although this didn't become established until the 19th century or so). Today, Christmas dinner without carp is unthinkable for most Czech families. The most common is fried breaded carp with potato salad. There are also other recipes, such as "black carp", baked with sweet sauce (made with dried plums, raisins etc.) or "blue carp" in sour aspic.
